Adjusting the spiciness of the sauce:
As is, the recipe produces a medium sauce. To change the amount of spiciness, simply adjust the butter-to-hot sauce-ratio:
Mild: Use 3/4 cup butter and 1/4 cup hot sauce.
Hot: Use 1/4 cup butter and 3/4 cup hot sauce.

Notes: I use Frank's® Buffalo Wing sauce in the recipe, as I enjoy the flavor of Buffalo sauce, but not the heat. If you like spice, you can use regular Frank's® Hot Sauce. I'm sure another hot sauce like Tabasco® would work fine, but Frank's® has a great flavor, not just heat. Use ranch dressing or blue cheese dressing as a dip for these fabulous wings!

  • I've used this recipe and it is the closest to hooters as you're going to get. I have started using an egg wash on my wings before putting them in the flour. no wait time to fry them that way and it leaves a nice coating on the wings.

  • Hooters Wings worked pretty good but still did not have the thick breading that the original has. Tried another batch with more flour and dredging the wings several more times but it really did make much of a difference.

  • This is definitely a terrific Hooter's imitation. I've been making this for some time now and I might add a few things. I've made wings with the "Official" ingredients that Hooter's sells in the grocery store with their specific instructions. The secret to the thick batter is letting them sit in the flour for a long time. The moisture from the wings begins to make the flour sticky instead of dry and floury. When they are sticky then coat them again with the dry flour. That's when they are ready for the fryer. Also Frank's sauce is the one. The "Official" sauce is either hot or mild depending on the ratio of margarine to Frank's. I use the Tupperware technique too but I might caution that the heated wings and sauce tend to pop the seal off if you don't burp it initially and after every couple of shakes. Makes a mess if this happens, so take heed.

  • I made the like Hooters buffalo wings sauce but I put it on chicken strips instead of wings and it was great. I followed the recipe, but I just used Texas Pete as the hot sauce and it tastes just like the strips that you get from Hooters. Yummy! I've eaten them 3 times in the past 5 days. The key is to make the sauce in a big bowl separate and then after you deep fry your strips put them right into the sauce after patting on a paper towel while they are still hot. They are great when you reheat them too.....Anyway, thanks for the recipe.

  • My boyfriend and I were looking for a good wings recipe and this turned out to be it. I like making them at home because you can decide how crispy you want them and how hot. I used the FRANKS BUFFALO WINGS hot sauce and also added in a SMALL amount of DAVIS INSANITY sauce. (If you use this comment please add that Daves is to be used with CAUTION) I also let them sit and then dipped them in the flour again like someone suggested. They turned out very very well.   • I tried your recipe for the "Hooters" buffalo wings...I've never been to "Hooters" but your recipe for wings is amazing! I also double dipped the wings in the flour mixture and used a combination of Franks regular red hot sauce and the "new" Franks xtra hot sauce.   • I tried the recipe and think they are really close to Hooter's. They don't taste quite the same and that may be due to using Louisiana Hot Sauce and not Frank's. I'm going to try Frank's next. I also thought they tasted too buttery. I used real butter and next time I'm going to try margarine and one with a lower fat content. Otherwise these are really close to Hooter's. (By the way, I made this recipe with shrimp instead of chicken wings.)

  • I have been making this recipe for buffalo wings after every home football game for two seasons (my boyfriend is a college coach). I have received rave reviews from all of the coaches. I use Texas Pete hot sauce and add a little Tabasco to the sauce mixture. I have also substituted Bisquick instead of flour...didn't make much difference!

  • Excellent! I used this receipe along with others for Superbowl Sunday. My guest were getting these as soon as they came out of the grease. I still had leftovers from the other receipe.   • That was a great recipe. With a little practice, I have mastered the wings. I refrigerate the coated chicken for at least 4 hours, turning every hour to recover in flour. If you don't have this much time, use buttermilk instead of water, this will make them really crispy. I cook the wings in a Lodge cast iron pan with a 75% vegetable oil, 25% lard solution.

  • I loved these wings. I saw a lot of comments about Hooter's using Frank's...let me tell you they are wrong. I work for US Foodservice and they buy their 911 and 3 mile sauce from Cargill/ Fontina. The rest they but from Eastern Food.

  • If you add a teaspoon each of dijon and horseradish - it kicks it up and is SO yummy, too!

  • I worked at Hooters and they definitely don't use Frank's. They have their own brand of sauce. Also, they do let the wings sit in flour for hours before frying them, which makes the crispy coating.

  • Oh my my my this recipe is DELICIOUS on chicken strips! The recipe is extremely easy and quick. To make them with a thick coating, flour and refrigerate the strips and before frying dip wings in buttermilk( add a little hot sauce of choice to buttermilk for xtra kick!). I used Louisiana Wing Sauce, real butter, and Frank's Hot Sauce for the wing sauce. Also bake the wings in oven @ 350 for about 5- 10 min. makes them crispy and thickens the buffalo sauce. Kudos to you Robbie, Kudos to you!!!

  • I've made this receipe for the last 3 years for Superbowl...and have modified it slightly to get the wings a little spicier...I add red pepper and ground chili pepper to the flour mixture as well as doubling the cayene pepper and papirika...I usually coat the wings 3-4 times with the flour mixture...leaving in the fridge for around 45 minutes between coatings,,,I have not yet tried the egg coating or butermilk coating as of yet but it does seem tempting...perhaps for next years super bowl party

  • Great recipe! I've made this several times now, however I bake my wings instead of frying them. I also use half of the butter called for as I don't find this affects the taste any. I have been making them with Louisiana hot sauce, but will try Frank's next!

  • I went with the Hooters wing breading I bought at Kroger (local grocery store) but I did cut in some ground cayenne pepper to the breading mix. I also fried the wings in 100% pure peanut oil in my turkey fryer for 13 minutes like you suggested. I tossed the wings in Franks red hot, and butter mix like you did, and KA-BOOM! Unbelievable!   • Good recipe! I did some experimenting with the sauce, and got it to be just like theirs! Start with Franks Red Hot in a pan, add a little fresh garlic, and melt in some salted butter (about 2 Tbsp per batch). Let it thicken up then toss your wing in a bowl with it! (O, and a little bit goes a long way bc of the thickness!)

  • Best wing recipe ever you can do at home! I made 50 wings for a party and none were left over! They were also a big hit at my july 4th party! My friends request these at every party I attend!

  • I double batter the wings to get an extra thick coat of breading. I coat the wings with the flour mixture and let them rest in the fridge for 1 hour. Then I mix 1 egg with 1 cup milk, dip each wing and then into the flour. I then put in the fridge for another hour. I will then check occasionally to recoat with flour (so the wings dont all get sticky). For 20 wings I use 4 times the normal recipe. One trick if you are pressed for time is to stick in freezer to get them cold fast. You have to cold wings when you put them in the oil. To really enjoy them you have to watch the Vols play football.

  • Ever since I found this recipe I have loved it. However I decided to do some experimenting and have found somethings that make this recipe even better. Instead of using paprika I use 1/2 tsp of southwest chipotle spice, add 1/2 tsp of creole spice and when heating up the hot sauce and butter I add in 1 Tbs of crushed red peppers 1 Tbs of vineger and 1 Tbs of Colgin Liquid Smoke(hickory. And i use Texas Pete hot sauce. Ever since i started making them this way I cant get the wings made fast enough for people to eat.

  • I like to use this recipe on chicken thighs not wings. You have to fry the thighs for a long time to cook them through (par-boil, or nuke first). There is so much more meat on the thigh than the wing, and it tastes just that much better.

  • I used boneless chicken instead, (like others above did) but when I make the sauce I put 1 and a half tablespoons of cornstarch in it and then bring to a boil. The sauce thickens and sticks to the tenders(or wings)better. Made them about 10 times in the past 3 weeks. Best tenders I've ever had. Thanks Robbie, Mike

  • I use boneless skinless breasts cut in bite-sized pieces. We call them Buffalo Boobs. Have made them on MULTIPLE occasions and never had anyone dislike them. Most of the time they are eaten up very, very quickly.

  • This is GREATNESS! Just like the real deal.
    Many people think Buffalo wings can be made with any hot sauce. Not true. The original recipe was with Frank's. You can make hot wings form any hot sauce, but only Frank's will make a true Buffalo wing sauce. Tabasco doesn't work. There is great argument in Buffalo about whether the wings are dippend in the blue cheese dressing, or ony the celery. Fights start amongst friends over this. For Buffalo wings at breakfast, accompany with Genesee beer. Genny is very smooth and is a great breakfast beer.

  • Buy the big complete chicken wings and then cut off the wing tip and the extra strip of skin between the 'leg' and the 'wing'. This gives you a meatier wing and not so much skin. I keep mine in stone ground high altitude flour and continually reflour them. I swear they grow two times this way! To the Franks Hot sauce and butter add a couple tablespoons of Rice Vinegar (look in the Oriental section of your favorite store)to give the wings a little snap to the nostrils without making them hotter to the taste. Great stuff!

  • Hey folks,. My sweetheart loves Hooter's wings. Because we go to so many outdoor concerts in the summer, I try to vary what we take along for a picnic dinner. I saw this recipe and decided to try to make it. Since I hate to fry anything (fattening and bad for cholesterol), I thought I might try to change a few things to get the good hot taste of Hooters without frying. the sauce was great. I dipped the wings in an egg/milk mixture to which I added hot sauce. I combined all dry ingredients, and coated the wings. Laid all of them out on a foil covered baking dish. set oven for 375'. Drizzled hot sauce mixture (tabasco, butter and vinegar) over the ready to bake wings. Baked wings for 40 min. Used the remaining hot sauce for dipping afterwards along with blue cheese dressing. Would have brushed more sauce on wings before baking or immediately after if I wasn't afraid they would have been to hot. delicious and not so fattening.
