The holidays are going to be here before you know it! I’ve already started thinking about parties we’re going to host and what sort of menu items I want to serve. As long as I can remember, my aunt has made delicious carrots each holiday (this is the same aunt as the famous chocolate pie I shared previously). When I got married, my best friend had shower guests share family recipes and she put them together in a recipe box for me at my shower. These carrots are one of the recipes that Aunt Evelyn provided and today I’m going to share them with you.

The holidays are coming, if you need a dish that is sure to impress your guests, these carrots are it! This recipe is easy to make and absolutely delicious.

Ingredients

Carrots

  • 2 Pounds Carrots - peeled & cut into ~2" length
  • Cook in salted water until start to soften

Sauce

  • ¼ cup cooking liquid from carrots
  • ½ cup mayonnaise
  • 1 Tablespoon minced onion
  • 1 Tablespoon horseraddish
  • ½ teaspoon salt
  • Dash pepper

Topping

  • ½ cup cracker crumbs
  • ¼ cup melted butter

Instructions

  1. In a large sauce pan, cook the carrots in salted water until they begin to soften
  2. Combine the sauce ingredients in a small pot and cook until well combined
  3. Butter a 9x9 Baking Dish
  4. Slice the cooked carrots thinly and spread out in backing dish
  5. Pour on the sauce
  6. Add the topping
  7. Bake at 350* for 30-40 minutes
